Bananas



I hate to throw away food. I either try to eat the rest of a meal for lunch the next day or that I overeat, or make someone else do. So to turn these too old and uneatable (even for me) bananas into a delicious and healthy banana bread makes me very happy and everyone else in the household! 


Recipe 
  • 1 egg
  • 100 gr raw sugar
  • 2 tablespoon dark syrup/ agave syrup
  • 4-5 ripe of bananas
  • 1 tablespoon coconut oil /olive oil
  • 200 gr whole wheat
  • 40 gr oatmeal  
  • 1 teaspoon baking soda
  • 1 teaspoon sea salt
Preheat the oven to 180°(360°F). Whip the egg and sugar together. Mash the bananas and blend with the egg/sugar, add the coconut oil and and syrup and blend with a mixer or fast hands. Mix together whole wheat, baking soda, salt and oatmeal. Now add the banana mix to the wheat mix and stir gently together. Pour the mixture in a loaf pan covered with baking paper. Bake for 45-50 minutes.

Alternative

Another old banana life extending idea is to peel them, cut in few pieces, freeze them, and use them to make banana smoothies. But then you miss out on the happy faces and compliments from your cohabitants.
