Date Cake






Simple and quick recipes are my favourite. This one is as simple as it gets, perfect if you get sudden craving for cake or have guests over with short notice. And the best part it´s really delicious.
I have the annoying habit of always changing the recipes I am making and in most cases it is for the worse since I am not the best or experienced cook ( I try to make them a little bit healthier or I don't have all the ingredients, which is very often ) but this one is so simple and already healthy there is no need to change it.  Although it would be possible to replace the butter with applesauce..........

Recipe 
CAKE BOTTOM

  • 200 gr wholewheat
  • 100 gr butter
  • 1/2 dl warm water
Put in a bowl and mix together with your fingers and then put in a round cake pan (thin layer little bit up on the sides). Stick the dough with fork so it will baked through. Bake for 15 min on 180°(360 F) and while you wait you do the date topping

TOPPING


  • 250 gr pitted dates  ( dried apricots/ figs)
  •  2 tablespoon fresh pineapple juice ( other fresh juice)
  • 1/2-1 dl water
  • 1 teaspoon vanilla extract
Put all in a pot and boil on low heat until the dates are soft.  Then mix them with an electric mixer and spread on top of the warm cake bottom.
  • Frozen berries / frozen mango pieces
 Put frozen berries on top ( they will melt quickly from the heat of the cake) 

SERVE




 Serve with cream / ice cream

Alternative

Its also very good to use this bottom layer for vegetable or cheese topping
